It was precisely in Italy that he began his professional career, working at the Villa d'Este (Lombardy) and the Hotel Des Bains (Venice). Later he went to Switzerland, where he worked at the Badrutt's Palace Hotel St. Moritz for eight years. There he met his wife, a Portuguese woman from Amarante, and nine years ago he decided to move to Portugal. She was part of the team at the Largo do Paço restaurant, in Casa da Calçada, from May 2016 until January 2023, when the space underwent renovations. At that time, she took over the management of Real by Casa da Calçada, in Porto. In April 2025, when Casa da Calçada reopened, he returned to Amarante, taking over the management of the Canto Redondo restaurant, where he remains today, after a break of a few months in 2026. ###### > --- --- #### Ciao Tilias [Book your table](https://www.thefork.pt/restaurante/ciao-tilias-r741684) Born in 1965 in Castro Daire, Rui Ribeiro, currently head chef at the Italian restaurant Ciao Tílias, entered the restaurant industry in 1987 in Switzerland, where he worked for two decades. In 2004, he completed a culinary course at the Hotel & Gastro Union and GastroSuisse. He returned to Portugal the following year, taking over the kitchen leadership of several restaurants in Amarante, a city that became his home. Responsible for the kitchen at Ciao Tílias since 2022, he has combined his decades of experience with continuous training in related fields, giving him a broad understanding of the industry.
